Butternut, Beetroot & Feta Salad

Ingredients
Butternut:
1 Butternut cut into cubes
1 Tsp Cinnamon
3 Tbsp Brown Sugar
Pinch of Salt
Olive Oil
Mix together, then Air-Fry 180DegC for 20 min. Add some honey over and bake again for another 2 minutes.
Salad:
Rocket leaves, cut finely
1/2 Red Onion, diced
1 Avocado, diced
100g Feta Cheese, diced
1 Cup Beetroot, diced
Walnuts, crushed
If there’s one thing I don’t like about leafy salads is how you have to stuff big leaves in your mouth. Cutting it up finely made it so much more enjoyable to eat!
