Spinach & Feta Pancakes

 

Ingredients

Crepe Pancakes
3-4 Mushrooms (sliced)
½ teaspoon Crushed Chilis
80 grams Spinach
1 Slice Feta Cheese
Salt & Pepper
  
Method:
 
1. Make crepes using any recipe. You can leave out the sugar or reduce the amount. (Personally, the sweetness of the pancakes pair well with the saltiness of the feta).
 
2. To a pan, add the mushrooms and chilis and sauté in olive oil. Once softened, add the spinach and feta. Mix until feta has softened and combined with spinach and mushroom.
 
3. To your crepe, add desired amount of spinach mix and close the wrap.
